
Sweet Potato Chocolate Brownie
If you're like us, you love a good chocolate brownie! That fudgy, warm chocolatey goodness is just so good. But these tasty morsels are too often packed with sugar and really not very good for you.
This tasty chocolate brownie is the answer! Sweetened naturally with sweet potato and packed with protein, you will swear these can't be good for you, but they are!

Ingredients
- 1 large sweet potato (600-7–gms)
- 2/3 cup maple syrup
- 4 eggs
- 1/2 cup coconut oil
- 2 teaspoon vanilla
- 3 tablespoons coconut flour
- 1 Scoops (30gms) Nude Whey protein powder
- 1/3 cup raw cacao powder or cocoa powder
- 1 tablespoon baking powder
- Pinch seas salt
How to make it:
Step 1: Preheat oven to 200 degrees celsius
Step 2. Poke some holes in the sweet potato and bake for 60 minutes or until soft
Step 3. Turn down the oven to 180 degrees celsius
Step 4. Once cool enough to touch, peel the sweet potato and mash in a large mixing bowl
Step 5. Add eggs, coconut oil, maple syrup and vanilla to the bowl and mix
Step 6. Add all dry ingredients and mix well
Step 7. Pour into a lined baking pan and bake for 40 minutes. Let cool for 10 minutes before taking out of pan and placing on a wire rack
Serve warm or keep chilled in the fridge.
